Watermelon Cucumber Salad
- 2 cups (300g) watermelon, diced
- 1 medium cucumber, spiralized or diced
- 1/4 cup (30g) sweet basil, chopped
- 1/4 cup (60ml) 100% coconut water
- 1 teaspoon honey
- Pinch of salt
In a large bowl, toss together watermelon, cucumber, basil, coconut water, honey and salt. Chill for 15 minutes before serving.
